Why microgreens are green?

Microgreens are harvested at a very early stage of growing, typically when their first set of true leaves appear. At this stage, they are particularly rich in chlorophyll.

Chlorophyll is the pigment responsible for capturing light energy from the sun during photosynthesis, a process by which plants convert light, water, and carbon dioxide into energy-rich sugars. This process is crucial for plant growth and development.

Vibrant green color is a good sign. Sign that they are healthy and full of nutrients.

Which microgreens are green?

Here are some examples of microgreens that are predominantly green:

  1. Pea Shoots: Pea shoots are young pea plants harvested at an early stage. They feature delicate green leaves and tendrils, offering a mild and sweet pea flavor.

  2. Sunflower Shoots: Sunflower shoots are the young sprouts of sunflower seeds. They have vibrant green and crispy leaves with a slightly nutty flavor.

  3. Broccoli Microgreens: These microgreens have green leaves and white stem with a mild and slightly peppery flavor reminiscent of mature broccoli. Called the most healthy microgreen.

  4. Arugula Microgreens: Arugula microgreens exhibit deep green leaves and a distinct peppery taste.

  5. Cilantro Microgreens: Cilantro microgreens have bright green, feathery leaves with a concentrated cilantro flavor.

  6. Lettuce Microgreens: Lettuce variety, such as lettuce crisp, has light, delicate leaves and is commonly grown as microgreens.

  7. Kale Microgreens: Kale microgreens have dark green leaves and a milder flavor compared to mature kale.

  8. Spinach Microgreens: These microgreens have rich green leaves and a flavor profile similar to mature spinach.

These examples represent just a fraction of the many microgreens available, each with its own unique flavor profile and culinary applications. Incorporating a variety of green microgreens into your diet can provide not only visual appeal but also an array of nutrients and flavors.
