General Information about Perilla Red Shiso
Perilla Red Shiso (Perilla frutescens var. crispa) is a premium Asian herb with a deep burgundy colour and a strong aroma of mint, basil, citrus, and anise. Its delicate microgreens add instant visual impact and a unique flavour to sushi, seafood, and fine-dining dishes, perfect for growers who want to offer chefs something truly different.
Compared with many popular microgreen varieties, Red Shiso grows more slowly. This longer development time rewards the grower with a premium microgreen prized by chefs for its colour, delicate texture, and concentrated aroma.
Do not soak
Do not soak the seeds. Sow them directly onto a moist growing medium. Red Shiso grows well on different media, including peat-based substrates and hydroponic mats, so you can choose the system that best suits your setup.
Slower germination
Germination is naturally slower than with many common microgreens. The first seedlings usually appear after about 5–7 days. You can use a standard germination method, but if you run into germination problems, we recommend keeping the seeds under light, covered with a light-permeable film or fabric. This keeps humidity high while still letting in the light Red Shiso seeds need to germinate well.
Watering
Keep the medium moist but not soaked. Once the seedlings are established, water from the bottom when possible to keep the leaves dry and lower the risk of mould or damping-off. Remove the humidity cover as soon as the seedlings emerge, and give them good airflow and enough light for compact, evenly coloured growth.
Harvest time
Red Shiso microgreens are usually ready to harvest from around day 15, depending on growing conditions and your preferred stage. Harvest once the cotyledons are fully developed and the first true leaves start to appear. For bigger leaves and a stronger aroma, let the plants grow a bit longer before cutting.
Seed storage is really important with Shiso
How you store the seeds strongly affects germination. Keep them at a stable temperature, ideally refrigerated in a sealed container. If you can't refrigerate them, protect them from big temperature swings between day and night, since repeated changes can lower germination. No special treatment or temperature schedule is needed to break dormancy.
Red Shiso microgreens are best used fresh and added shortly before serving so their colour, texture, and aroma remain at their best. They pair particularly well with:
Sushi, sashimi, poke, and ceviche: their citrus-herbal flavour complements seafood.
Salads, cold starters, and rice dishes: for colour and aromatic freshness.
Ramen, miso soup, grilled fish, and meat: add after cooking as a finishing touch.
Fruit, sorbets, and delicate desserts: for a fresh herbal contrast.
Cocktails, lemonades, and infused drinks: as an aromatic garnish.
Their deep red-purple colour makes them especially effective as a finishing microgreen for restaurant plating, while their distinctive flavour adds more than decoration alone.
Nutritional Benefits of Perilla Red Shiso
Red Shiso contains naturally occurring anthocyanins and other polyphenols. These plant compounds contribute to its characteristic colour and antioxidant activity. Like other fresh leafy greens, it can add variety, flavour, and plant-derived nutrients to a balanced diet.
The nutritional composition of microgreens can vary with the seed lot, growing medium, light, harvest stage, and storage conditions. Red Shiso should therefore be presented as a flavourful, nutrient-rich food rather than as a treatment or cure for any medical condition.
