Ingredients:

(Makes approximately 24 ice cubes)

  • 1-2 handfuls of herb microgreens (Lemon Balm, Basil, Thyme, or mixed varieties)
  • 2-3 cups filtered water
  • (Optional) 1 teaspoon honey or agave syrup for subtle sweetness
  • (Optional) 1 tablespoon lemon or lime juice for enhanced citrus notes

Instructions:

  • Prepare the microgreens: Select vibrant, intact leaves. Only wash if necessary.
  • Arrange in ice cube trays: Place 2-3 individual microgreens into each compartment of your ice cube tray. 
  • Prepare the liquid:  You can use plain filtered water or enhance it with optional additions. If adding honey or lime juice, combine with the water in a pitcher and stir until completely dissolved. The liquid should be clean and clear for the best aesthetic result.
  • First freeze: Fill each ice cube compartment halfway with the prepared liquid. Place the tray in the freezer for 1-2 hours until partially frozen. This step ensures the microgreens remain suspended in the center of each cube rather than floating to the top.
  • Complete: Top off with remaining liquid. Freeze 4+ hours until solid.
